Noel Cookies

Ingredients:
1¾ cup of Stevia (Cooking Stevia)
3 tablespoons diet margarine
1 egg
1 teaspoons nut oil
1 cup plain flour
1 ½ teaspoon de bicarbonate of soda
1 ½ cup rolled oats
½ cup raisins
1 tablespoon of chopped nuts

Method:
1. Mix the Stevia, margerine, egg, nut oil and
3 tablespoons of water.
2. Beat until fluffy.
3. Slowly add the flour, bicarbonate, oats,
raisins and nuts. Mix well.
4. With a tablespoon, add porcions to a greased
baking tray.
5. Bake in preheated medium for 20 minutes until
the cookies are golden.
6. Makes about 50 cookies.

Chocolate Mousse
Ingredients:
 1 cup dry skimmed milk
½ cup boiling water
1 teaspoon margarine
1 ½ cup cooking Stevia
1 pack plain gelatine
3 egg whites
1 tin light cream
2 tablespoons of Stevia Chocolate

Method:
1. Mix non stop in a blender the dry milk, boiling water, margarine and cooking Stevia for 5 minutes por 5 minutos until thick. This
is a home made condensed milk.
2. Dissolve the gelatine in 8 tablespoons
of boiling water
3. Beat the egg whites until fluffy like snow.
4. Mix the condensed milk with the cream
and Stevia Chocolate.
5. Last, add the gelatine and slowly add
the egg whites.
6. Put the mix in glasses and take them to
the fridge until thick
7. Makes 15 porcions

Chocolate-Peanut Butter Fudge


Serving Size: 1 square (1 1/2" x 1 1/2") Total Servings: 25

  • 1/3 cup boiling water
  • 1 3/4 tsp. stevia extract (see page xii for brand variances)**
  • 6 Tbsp. unsalted butter, cut in small pieces
  • 1 1/2 tsp. vanilla extract, divided
  • 1 cup (8 oz.) instant nonfat dry milk
  • 6 oz. unsweetened baking chocolate, chopped (look for Scharffen Berger or Ghirardelli brand)
  • 1 cup natural peanut butter

 Measure 1/3 cup boiling water and add stevia. Mix until dissolved. Add the butter and stir until most of it is melted. Add 1/2 tsp. vanilla extract and stir. Pour in mixing bowl and add the dry milk. Mix until blended.

Place chocolate and peanut butter in a microwave-safe bowl and cover. Melt chocolate and peanut butter in microwave for a minimum of 1 1/2 minutes on high. Stir well and microwave another 20 seconds or until the mixture is melted and smooth when stirred. Add butter/milk mixture to peanut butter/chocolate and stir well with electric mixer or by hand. Stir in remaining 1 tsp. vanilla extract.

Foil line an 8" square pan and pour fudge into it. Flatten top with knife or wooden spoon. Cover and refrigerate for about 1 hour. Cut into squares. Keep refrigerated. Stays fresh for about 3 to 4 days in fridge or in freezer in an airtight container for up to 2 months.
